Vinification:
The 2014 Saint Aubin la Charmois is 50% fermented in foudres, 5% in new oak and 45% in barrel.
Tasting Notes:
It has a light rosewater-scented bouquet with attractive white peach scents developing in the glass. The palate is fresh on the entry with crisp acidity, a nice chalkiness to the texture with a short but poised finish. This is a lovely Saint Aubin to enjoy over the next 4-5 years, one of the best wines from Au Pied du Mont Chauve this year.
Domaine Au Pied du Mont Chauve -- this interesting name comes from a member of the famous winemaking family in Bourgogne -- Francine Picard. "Mont Chauve" means Montrachet. The winery extends over Chassagne-Montrachet, Puligny-Montrachet and Saint-Aubin communes in the heart of the most beautiful climats and soils for Bourgogne wine. The winemaking team cultivates the plots using biodynamic principles. Wines have a depth and intensity that reflect the chalky and mineral characteristics of the finest limestone soils in the world. With the appropriate usage of barrels, the taste is perfectly balanced. Fabrice Lesne is now the winemaker, and he has joined since 2010 after he left Domaine Nicolas Potel, where he was responsible for its white wine making.
