Vinification:
Clay and limestone soil
100% bleed (vin de saignee) and raise on lees. Less than 9000 bottles per year.

Tasting Notes:

Pale pink orange with a little salmon in color.

The nose with its freshness of lime and menthol with fennel and red fruits appear. The flavors of spices and raspberries evolve towards a salivating, slightly saline finish. Fresh, rich, unforgettable rosé.

Food Pairing :

Grilled fish ;  White meat, Quail with mushrooms, Goat cheese.

Suitable for Vegan:  Vegetable pizza, Vegetables Tina , Tomatoes stuffed with Quinoa.


Winery Story
Located on the northern slope of Provence's Alpilles, the domaine is part of the small, quality-conscious Les Baux de Provence AOC - 85% of vineyards are now organically cultivated. Most of its vignerons practice organic viticulture, and their efforts towards sustainable, low-intervention viticulture is facilitated aided by the area's warm, dry climate, which reduces the risk of rot and disease and reduces the need for chemical interventions. Since 2000s, the domaine was already under organic conversion, and the winery received organic certified in 2010, and vegan certified in 2011.
